Ingredients

1 cup whole wheat flour
1/3 cup wheat germ
1/2 cup plus 2 tbsp ground flaxseed
1/3 cup quick oats
2 tsp cinnamon
1 tbsp baking powder
1/4 cup sugar
1 1/2 cup fat free milk
6 tbsp water
1 tbsp vanilla
2 small/medium bananas, peeled, mashed
1 tbsp grapeseed oil
Directions
In a large bowl, combine flour, wheat germ, 1/2 cup ground flaxseed, oats, cinnamon, baking powder, and sugar.
In a bowl, combine 2 tbsp ground flaxseed and 6 tbsp water. Add milk, mashed banana, vanilla, and oil; whisk thoroughly.
Pour milk mixture over flour mixture and stir until combined.
Heat a large nonstick skillet over medium-low heat. Lightly grease with nonstick cooking spray. Pour 1/4 cup batter per pancake. Flip with spatula when tops bubble and edges look slightly dry. Cook until the other side is golden brown, about 2 minutes per side.
Makes about 16 pancakes. Serving size is 2 pancakes.
