    1 pound Fresh or frozen large shrimp in shells
    2 cloves garlic, minced
    1/2 tsp finely shredded lemon peel
    3 c whole resh baby spinach leaves
    2 medium tomatoes, cut into thin wedges
    1 medium cucumber, quartered lengthwise and sliced 1/4 inch thick
    1/3 c pitted kalamata olives
    1/4 c chopped red onion
    1/4 c thinly sliced radishes
    1/4 c crumbled feta cheese (1 oz)
    1 recipe Greek Vinaigrette -
    3 tblsp extra virgin olive oil
    1 tblsp red wine vinegar
    1 tblsp lemon juice
    1 tblsp chopped fresh mint
    1 tblsp chopped fresh oregano
    dash of kosher salt
    dash freshly ground black pepper
    Shake well and store in refrigerator - bring to room temp. prior to serving.


1. Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact if desires. Rinse shrimp, pat dry and toss with garlic and lemon peel. Cover and chill for 30 minutes.
2. Meanwhile, in a large bowl combine spinach, romaine tomatoes, cucumber, olives, red onion and radishes, toss to combine and set aside.
3. Thread shtrimp onto four 8 inch skeweres leaving a 1/4 inch space between pieces. Grill for 6-8 minutes, turning halfway through.
4. To serve, divide greens mixture among 4 dinner plates. Sprinkle with feta cheese. Top with shrimp and drizzle with vinaigrette. Service with pita bread.
