    1 cup low fat buttermilk
    1/2 cup dry oat bran
    6 oz. fresh blueberries
    2 eggs beaten
    1 tsp. canola oil
    Sweetner (optional)


Mix all ingredients together except the blueberries. Heat up a saute pan with cooking spray, drop small amounts of mixture into the pan and cook on each side. Place all the cakes on a plate and put the blueberries in the saute pan. Add a few drops of water and sweetener (optional) and stew until the juices begin to release. Pour over the pancakes.
