Did some experimenting with a blueberry recipe and this is what I got. YUM! Did some experimenting with a blueberry recipe and this is what I got. YUM!

    Milk, 1%, 1/2 cup
    Applesauce, unsweetened, 1/2 cup
    Juice of one lemon
    Zest of one lemon
    Egg, fresh, 1 medium
    Whole Wheat Flour, 2 cup
    Brown Sugar, 1/2 cup, packed
    Baking Powder, 3 tsp
    Salt, 1 tsp
    Blueberries, fresh, 1 cup


Preheat oven 400F degrees. I use liners so there isn't extra fat from greasing up a pan. Make to let muffins cool completely or they will stick to the liners when you go to take it off!

Blend milk, applesauce, egg in a small bowl and set aside. Don't add the lemon yet because it will curdle the milk.
Stir flour, brown sugar, baking powder, lemon zest and salt in a medium bowl. Add the lemon juice the wet mixer. Make a well in the center and pour wet ingredients into the well. Stir with a spoon just until the flour is moistened (batter will be lumpy). Fold in blueberries. Divide batter among muffin cups. Bake until golden brown; regular size muffins bake in 18 to 20 minutes, mini-muffins bake in 10 minutes. Immediately remove from pan and let cool.

Use a small cookie dough scoop to portion out the batter. It really does make it easy and they're fun to use.
