Ingredients

    1 8 oz. pkg. 1/3 less fat cream cheese
    1/4 cup Light Mayonnaise
    2 Tbs Lemon Juice
    1/2 tsp Salt
    1/8 tsp Pepper
    1/4 tsp ground ginger
    4 drops red hot pepper sauce (i.e. Tabasco)
    12 oz. finely cut, cooked Chicken Breast
    1 tsp dehydrated onion flakes
    2 hard-boiled eggs finely chopped (for recipe calculations, I used Eggland's Best)

Directions

Ready time 4 hours 30 min.

Boil chicken and chop fine (I use a food processor - I also keep cooked grilled chicken in the freezer, so I use grilled - it adds extra flavor.)

While chicken is boiling, mix cheese, mayonnaise, lemon juice, salt, ginger, pepper, and pepper sauce. Stir in chicken, eggs and onions. Put mix onto plastic wrap or wax paper and shape into a log. Refrigerate until firm (about 4 hours.)
If desired, decorate with chopped olives, peppers, sesame seeds or green onions.
Serve with crackers. (My favorite with this are wheat thins.)

For the calorie tracker, I said this was 16 servings. That is a good snack size. I've been known to make it lunch and eat 2 servings. Enjoy!
