This smooth creamy soup is an elegant start to a meal or can stand alone. This smooth creamy soup is an elegant start to a meal or can stand alone.
Number of Servings: 6


    1 med. head cauliflower -- cut into chunks
    2 med. stalks celery -- chopped
    1 t lemon juice
    2 T margarine
    1/4 cup flour
    4 cups water
    1 T Better than Bouillon chicken base
    1/2 c. Chobani 0% plain Greek yogurt
    white pepper to taste


In pot, gently cook cut-up cauliflower and celery in 2 cups water with the lemon juice. Takes about 10 minutes.
When cool enough, puree in a blender until smooth.

In pot, melt margarine, stir in flour, then add chicken base, whisking until smooth. Cook until thickened and bubbly.

Add pureed cauliflower mixture and heat.
Add white pepper to taste. Stir in yogurt.

Makes 6 one-cup servings. Top each with a little shredded cheese.
