    1 C chopped bell pepper, both red and green
    1/2 C onion, chopped
    1 medium tomato chopped
    4 4oz tilapia filets
    2 Tbsp water
    2 tsp Louisiana hot sauce
    1 1/2 tsp thyme
    1 Tbsp butter


Heat a large nonstick skillet over medium high heat; coat pan with cooking spray. Add tomato mixture and cook 2 minutes. Remove from pan.

Coat pan with cooking spray; add fish. cook 2 minutes or until lightly browned. Turn fillets; add tomato mixture to pan. Cover and cook 5 minutes or until fish is flaky.

Mix water, sauce, ,thyme, and butter in a pan. cook until butter melts. Spoon over fish and tomato mixture.

1 fillet and 1/4 C tomato = 1 serving
