Ingredients

    1.5 Pkg Trader Joe Chicken Breast tenderloins
    4 tbsp TJ's Island Soyaki

    Bag of Organic baby spinach
    Half of a fresh pineapple, cut in chunks
    3 navel oranges, cut up in chunks
    2 cups warm brown rice

    Citrus vinaigrette:
    1/4 cup orange juice
    1/2 cup rice wine vinegar
    1/2 tbsp dijon mustard
    2 cloves of garlic, minced
    2 tbsp extra virgin olive oil
    1 tsp honey

Directions

Marinate chicken overnight w soyaki
Grill on George Foreman

Whisk vinaigrette ingredients together, taste and adjust as necessary. Toss spinach with the pineapple, oranges and vinaigrette, put on a plate. Add a 1/4 cup brown rice sprinkled on top of salad. Add chicken on top. Enjoy!
