I saw this but knew I could make it leaner! I saw this but knew I could make it leaner!

    La Tortilla Factory LoCarb, High Fiber Tortillas (10)
    1 regular size jar of salsa
    1 14 oz. can of enchilada sauce
    2 cans of low sodium black beans
    1 box of frozen corn kernels (I used niblets)
    2 2 cup packages of Taco Cheese blend
    2 pounds of ground chicken or turkey


preheat oven to 350
cook ground meat in skillet (season as you like, I used chili powder and Aldi chicken rub)
mix salsa and enchilada sauce together in a bowl
rinse and drain beans, then mix with corn (if corn requires steaming steam for half the time in microwave)
spray to 10 in round cake pans (unless you have 8 which would work better
place one torilla in bottom of each pan, layer in some meat, sauce, corn/bean mixture, and cheese. top with new tortilla and repeat until you end with only cheese and sauce on top of fifth tortilla in each pan
Cook for around 30 minutes.
toppings of sour cream, hot sauce, or more cheese are optional and not included in calories.
Baking spray and seasoning also not included in calories
