    1 lb peeled, deveined shrimp
    2 tbsp extra virgin olive oil
    2 tbsp barbecue rub (or cajun type seasoning)
    1 tsp salt
    1 10oz bag of frozen spinach, thawed
    4 oz chunk of fat free cream cheese


Makes 4 servings.
In a bowl, toss the shrimp with olive oil, barbecue rub and the salt. Transfer mix into a skillet and cook the shrimp just until pink, then add the thawed spinach and cook until heated through. Remove from the heat and stir in the 4oz of cream cheese. Mix until creamy.
