A yummy way to use some zucchini from your garden A yummy way to use some zucchini from your garden
Number of Servings: 8


    6 cups grated zucchini
    3 Tbspn olive oil
    10 basil leaves chiffonade
    3 oz fat free feta cheese
    salt and pepper to taste


Grate the zucchini and toss in a hot pan with the heated olive oil. Cook on medium heat for about 10 minutes, stiring occasionally. Add salt and pepper. Stir in. Toss in the basil and heat through (less than 1 minute). Turn off heat and add in the fat free feta. Put on top of cooked pasta of choice. Makes 8 servings.
