    8 skinless, boneless chicken thighs (1 3/4 lb)
    1 tbsp reduced sodium soy sauce
    1 lb red potatoes, unpeeled
    1 lg red pepper
    3 tbsp sugar free apricot jam
    1 tbsp fresh lemon juice
    1 1/2 tsp vegetable oil
    4 green onions, sliced


Pre-heat oven to 425. In a large bowl, combine the chicken and soy sauce; let stand. Cut potatoes and red pepper into 1/2 inch pieces. In a small bowl, mix the jam and lemon juice until well blended. In a large microwave safe bowl, combine potatoes and 1/4 cup of water. Cover with vented plastic wrap and microwave on high for 5 minutes. Drain. Meanwhile, spread chicken on a foil-lined jelly roll pan; brush with jam mixture. Cook chicken for 15 minutes or until meat is no longer pink. While chicken is in the oven, in a 12in non stick skillet, heat oil on medium for 1 minute. Add pepper and cook for 3 minutes, stirring. Add potatoes, green onions and salt to taste. Cook 5-7 minutes or until lightly browned, stirring. Skim and discard fat from pan juices; serve chicken and hash with juices.
