Ingredients

    8 boneless, skinless chicken thighs
    2 tsp ground cumin
    dash of salt and pepper
    1 tsp ground paprika
    1/2 tsp ground allspice
    1 cup chicken broth
    1/2 cup salsa
    3 garlic cloves, chopped
    1 can (15-19 oz) black beans (rinsed and drained)
    4 medium sweet potatoes (peeled and cut into 2 inch chunks)

Directions

Mix all the ingredients with the exception of chicken, beans and sweet potatoes in a bowl. In the slow cooker, combine the beans and sweet potatoes. Place the chicken on top of the mixture, then pour broth mixture over the chicken. Cook on low for 8 hours or on high for 4 hours.

    This was quite delicious! I was gone from home for almost 12 hours - I used frozen chix thighs (4) and cut the sweet potatoes in bigger chunks. This had great flavor and was very yummy and easy. Thanks! - 10/26/10

    So, so good! I used chicken breasts instead of thighs and added more salsa for an extra kick. This dish was extremely filling and there was a lot left over. I will definitely be making this again! - 9/10/10

    This was really really good. I am not used to eating chicken thighs, but I know they work better in the slow cooker so I did use them; next time I think I will try it with breasts, even though they tend to dry out. Love this flavor combination, though. Thanks for sharing! - 7/22/10

    Really loved this dish. Started with frozen chicken breasts. Only had a tiny bit of cumin left in house, so we ended up adding cinnamon and it worked really well. Can't wait to have it again. - 10/5/13

    Rather disappointed with this. I thought the sweet potatoes would add a sweetness, but instead they were just mushy. I even doubled the beans and the spices to give it more flavor, but no help. We are eating the left overs tonight. I am hoping it will taste better than it looks. - 1/17/13

    My family loved this! I used chicken breasts and used two cans of 15 oz. black beans and extra salsa (organic low sodium). I cooked it for about 4 hours on low and then 45 minutes on high. The chicken shredded easily. Stir well after cooking to make a perfect stew. Garnish w/ fresh cilantro! - 1/13/13
