This Pineapple Ginger Chicken is easy to cook, low in calories, and great with 1/2 cup of rice! This Pineapple Ginger Chicken is easy to cook, low in calories, and great with 1/2 cup of rice!
Number of Servings: 4


    4 chicken thighs, bone in but skin removed
    1 "20 ounce" can of pineapple chunks in their own juice (about 2.5 cups)
    1 tbsp powdered chicken boullon
    .25 cup of water
    2 tbsp low sodium soy sauce
    2 tbsp brown sugar
    1/2 teaspoon ground ginger powder
    1 garlic clove, chopped finely
    1/4 teaspoon pepper

    For sauce:
    2 tbsp cornstarch
    2 tbsp water


Remove skin from chicken and rinse well. Shake off the chicken to remove water. Place in crockpot.

Drain the pineapple juice into a bowl, and save the chunks for later.

Add the boullon, water, soy sauce, brown sugar, ground ginger, garlic, salt, and pepper and mix. Pour into the crockpot.

Cook on low for 4-6 hours.

Just before you want to eat, mix the cornstartch and water in a separate bowl. Once it's mixed, pour into the crockpot and stir. Don't just pour it into the crockpot without mixing or you'll get lumps.

Cook another 20 minutes on low.

    Easy to make ahead. I even left in the crock pot too long and it was falling off the bone good :) - 2/20/12
