Ingredients

I medium onion, diced
2 tsp garlic, finely chopped
2 Tablespoons Canola Oil
1 teaspoon fennel seeds, freshly crushed
1/2 ounce (half package) dried crimini mushrooms
1 cup homemade salt-free vegetable stock
1 cup (2 ox.) dried soy protein
6 leaves basil, chiffonade (rolled together and sliced into thin strips)
pinch of sea salt
1 can Trader Joe's diced, fire-roasted tomatoes with green chiles
Directions
Reconstitute dried criminis in the stock according to package directions. Save the soaking liquid. Crush fennel seeds with mortar and pestle
Heat canola oil in medium saucepan over medium high. Add onions, saute until translucent. Add garlic and salt, saute until aromatic, but don't let it brown. Add zucchini and basil. Saute until zucchini just starts to soften. Add mushrooms soaking liquid, and tomatoes. Reduce heat to medium, cover tightly, and simmer for 20 minutes. Most of the liquid should be absorbed. Serve over soy noodles. Serves 4
