    4 teaspoons cornstarch, divided
    1/2 teaspoon sugar
    3 tablespoons reduced-sodium soy sauce, divided
    4 tablespoons reduced-sodium beef broth
    3 teaspoons sesame oil, divided
    3/4 teaspoon hot pepper sauce
    1 pound boneless beef sirloin steak, cut into 1/2 inch
    4 teaspoons canola oil,divided
    1 each medium sweet red, yellow, and orange
    peppers, cut into 1/4-inch slices
    1 medium onion, cut into thin wedges
    3 garlic cloves, minced
    1 tablespoon minced fresh ginger root
    6 romaine lettuce leaves, cut into 1/2-inch strips
    1 can (8 oz) sliced water chestnuts, drained


In bowl, combine 4 teaspoons cornstarch and sugar. Stir in 2 tablespoons soy sauce, broth, 2 teaspoon sesame oil and hot pepper sauce until combined.
In another bowl combine the remaining cornstarch soy sauce and sesame oil. Add beef and stir gently to coat.
In a large nonstick skillet or wok, stir-fry beef in 2 teaspoons of canola oil until no longer pink. Remove and keep warm.
In same skillet stir-fry peppers, onions, garlic and ginger in remaining canola oil until vegetable are crisp-tender. Stir in reserved soy sauce mixture water chestnuts and lettuce and beef cook and stir for about 1 minute. Yields 8 servings
