Introduction

Number of Servings: 3

Ingredients

    1 Tbsp. olive oil
    1 chopped onion
    1 cup chopped celery
    2-3 chopped tomatoes
    4 quartered red potatoes
    Fresh ground black pepper to taste
    1/2 cup chicken broth
    3 cloves garlic
    1 can Cr. of Potato Soup
    1 Tbsp. tomato paste
    2 cups chicken broth, or desired consistancy
    1/2 Tbsp dried dill
    12 oz. Tilapia cut in large chunks

Directions

Makes 3 big bowls of soup, or more smaller servings

Heat oil
Saute onion - tomatoes, cook til soft
Add potatoes, pepper, and 1/2 cup broth, cook until potatoes are done
Add garlic, soup, paste, and stir until incorporated.
Add broth until desired consistancy.
Bring to boil
Add fish and dill.
Reduce to simmer.
Cook 5 minutes or until fish flakes.
