Ingredients

    1-2 Pounds Chicken cut into strips
    3 T. Balsamic Vinegar
    2 T. Olive Oil
    1 c. green, yellow and red bell pepper strips
    2 tsp. minced garlic
    1 c. cherry tomatoes (halved)
    1/4 c. pesto (store bought or fresh)
    4 c. whole wheat spaghetti (or pasta of choice)
    Chopped black olives

Directions

Saute chicken in balsamic vinegar , olive oil and minced garlic. Slightly blacken each side of strips. Sautee the vegetables in reduction after chicken is cooked all the way through until they become a bright color, but still crispy. Remove from heat. Toss the chicken, veggies, pesto and black olives together with the already prepared pasta and serve immediately. Will yield 4-8 servings dependant upon portion size. Quick, easy and delicious!

    i made 2 changes to this... got rid of the tomatoes and olives and added mushrooms instead. It was VERY good! :) - 4/7/08
