    3 (15-oz) cans black beans
    1 1/2 lbs ground turkey
    2 large red onions, chopped
    1 large green bell pepper, chopped
    1 large red bell pepper, chopped
    1 large yellow bell pepper, chopped
    1/2 cup olive oil
    3 can diced tomatoes
    2 tsp ground cumin
    2 tsp ground oregano
    2 cloves garlic, minced
    1 pkg. finely shredded cheddar cheese (optional)
    sour cream (optional)


Saute ground turkey, red onions, and garlic in olive oil spicing with pepper to taste. All all bell peppers, oregano, and cumin. Continue to saute until vegetables are tender and meat is cooked throughout. Meanwhile, drain black beans and add to large cooking pot along with undrained tomatoes. Add a can of water. (More or less water can be added to thicken or thin the chili now or throughout cooking period). Add meat mixture to pot. Simmer over low heat for at least 2 hours to gather flavor. Serve over a bit of shredded cheese in each bowl with a small dollop of sour cream if desired. Makes 16 1-cup servings (give or take given the amount of water added)
