    1 pound carrots
    finely grated zest and juice of 1/2 lemon
    1 tbsp brown sugar
    1.5 tbsp extra virgin olive oil or sunflower oil
    1 tsp sesame oil
    1 tsp fresh oregano
    salt and pepper


Finely grate carrots and place in large bowl. Stir in lemon zest and lemon juice. Add sugar and oils and mix well. Add more lemon juice and seasoning to taste, then sprinkle on the oregano and toss lightly to mix. Let sit for one hour before serving.
