    1/2 c Maple syrup
    2 c Heart Smart Bisquick Mix
    1-1/2 c low fat buttermilk
    2 T Splenda
    1 tsp vanilla extract
    9 egg whites, separated
    7 slices Butterball turkey bacon
    7 T Kraft 2% shredded cheddar cheese


MAPLE SYRUP CRYSTALS: Put a silicone baking mat on a nonstick cookie sheet and place in the freezer. Pour maple syrup into a nonstick skillet over medium heat. Cook until bubbly, stirring constantly as you continue to cook 4 to 5 additional minutes. Take the sheet out of the freezer and, using a spoon and holding the sheet at a 45 degree angle, drizzle the syrup over the baking mat in long thin strips. When cool, break apart into crystal chunks. This makes enough for 20 pancakes (apx 5 g per pancake).

PANCAKES: Preheat griddle to 350F and spray with Pam. Combine Bisquick, buttermilk, Splenda, vanilla extract, and 2 egg whites and mix until lumps disappear. Using scant 1/4 c measure, pour pancakes into hot griddle and sprinkle maple crystals over the top. Cook pancakes until done, turning once, and keep warm. Makes 14 pancakes.

OTHER: While pancakes are cooking, cook bacon by method of choice (bake, fry, microwave) until crispy. Break each slice in half so you have 14 pieces.

For the egg whites, I prefer to use a 1 cup Pyrex liquid measuring cup. I put in one egg white, sprinkle with 1 T cheese, cover with plastic wrap, and microwave for 30 seconds, give it a small swirl, and microwave for another 20 to 30 seconds until cooked. This makes the egg white (or Egg Beaters) into the perfectly round, puffed shape for these type of breakfast sandwiches. Alternatively, you could cook all the egg whites at once in a nonstick skillet sprayed with Pam.

ASSEMBLY: Place one pancake on the plate, put on one cooked egg white with cheese, add 2 pieces of bacon, and top with another pancake.

Makes 7 "McGriddle" sandwiches.
