Ingredients

    Lagane noodles
    Mozzarella cheese
    Cottage Cheese, fat-free
    Parmesan Cheese
    Zucchini
    Tomato sauce
    Crushed tomatoes
    basil
    oregano
    garlic
    onion
    pepper

Directions

Preheat oven to 350. Lightly spray 9x13-inch baking dish with cooking spray. In a small bowl, combine 1/4 cup mozzarella and 2 TBSP parmesan cheese. Set aside. In a medium bowl, combine the remaining mozzarella and parmesan cheese with all of the cottage cheese. Mix well and set aside. Combine tomoato sauce with the remaining ingredients and heat to boiling over medium heat. Spread a thin layer of tomato sauce mixture in the bottom of the baking dish. Add a third of the noodiles in a single layer. Spread half of cottage cheese mixture on top and then add a layer of zucchini. Repeat layering once. Top with remaining third of noodles, sauce, and reserved cheese mixture. Cover with aluminum foil and bake for 35 minutes. Uncover and bake an additional 10 minutes. Allow to stand for 10 minutes before serving.

    This was tasty and a creative way to use zucchini. Not a favorite, but I'll rotate this through again from time to time. There were some leftovers to throw out, so at my house that tells me something, lol. - 11/5/08
