Introduction

Pesto lends itself to many variations; this is my favorite. Walnuts can be substituted for pine nuts and I sometimes use extra fresh partley and marjorum if I don't have 3 cups of basil. Ingredients

    3 C Fresh Basil
    1/2 C Fresh Parsley
    4-6 cloves garlic
    1/2 C Extra Virgin Olive Oil
    1/3 C Parmeasan Cheese
    3 TBS Ricotta, part skim milk
    3/4 TSP salt

Directions

Put all ingredients in a blender or food processor and belind until all of the herbs are chopped and you have a highly fragrant thick sauce.
