Introduction

Skewered, marinated shrimp, grilled over a charcoal fire. Skewered, marinated shrimp, grilled over a charcoal fire.
Number of Servings: 6

Ingredients

    1/2 cup (1 stick) butter, melted
    1/4 cup olive oil
    1/4 cup finely chopped cilantro
    1/8 cup finely chopped parsley
    1/8 cup finely chopped thyme
    1/4 cup fresh lemon juice
    6 large garlic cloves, crushed
    1 tablespoon sea salt
    1 teaspoon freshly ground black pepper
    2 pounds shrimp (21 to 25 per pound)

Directions

Combine the first nine ingredients in a large bowl. Mix in shelled shrimp. Marinate at room temperature for one hour or for five hours in the refrigerator, stirring occassionally. Prepare barbecue with medium coals. Thread shrimp on narrow skewers. Grill until just opaque, about 2 minutes per side. Serving suggestion: line a platter with fresh spinach leaves. Arranage skewers on platter and garnish with lemon slices. Makes 4 to 6 main course servings.
