    4 large carrots, chopped
    3 stalks celery, chopped
    1 large onion, chopped
    2 14 1/2 oz cans 99% fat-free chicken broth
    3 cups water
    6 boneless, skinless chicken thighs
    3 cloves garlic, crushed
    1 tsp basil
    1 tsp oregano
    1/2 tsp thyme
    1 tsp salt
    1/4 tsp pepper
    1/3 cup parsley
    8 oz egg noodles


Combine first twelve ingredients in a soup pot and bring to a boil. Simmer for 30 minutes or until chicken is done. Remove chicken and allow to cool slightly. Skim any fat. Shred chicken and return to pot. Add parsley. Simmer for an additional 5 minutes. Cook noodles in a separate pot according to package directions. Spoon soup over noodles. Enjoy.
