    1 egg, 2 egg whites, 1.5 Tbs splenda brown sugar blend, 1.5 Tbs brown sugar, 1 Tbs granulated sugar, 3 medium bananas, 1/3 cup buttermilk, 1 Tbs vegetable oil, 1 Tbs vanilla extract, 1 3/4 whole wheat flour, 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, 1 cup blueberries


makes 16 squares in an 8" square baking dish.

Preheat oven to 325 degrees. Grease square 8" pan.
Using electric mixer beat eggs, egg whites and sugars in large bowl until thick and light, about 5 minutes.
Mix in smashed bananas, buttermilk, oil and vanilla.
Sift flour, baking powder, baking soda and salt over mixture, beat until just blended.
Stir in blueberries carefully so they don't get mashed. Transfer batter to prepared pan.
Kae bread until golden brown on top and done in the center (about an hour)

This is a variation to it reduces the amount of sugar and egg yolks and adds blueberries for flavor and texture.
