Introduction

A delicious muffin. A delicious muffin.
Number of Servings: 60

Ingredients

    5 cups flour
    3 cups packed brown sugar
    1 tsp salt
    2 tsp baking soda
    2 Tbs cinnamon

    4 eggs
    1 1/3 cups oil
    2 cups milk soured with 1 Tbs vinegar
    2 tsp vanilla

    6 cups diced rhubarb


    Topping

    4 Tbs butter
    1 cup sugar
    2 Tbs cinnamon

Directions

Add first 5 ingredients in mixer bowl...add 4 eggs, oil, milk, and vanilla...mix in rhubarb...spoon into muffin cups...mix up topping...sprinkle some on top of each muffin...makes 60 muffins. Bake at 375 for about 25 minutes.
