Number of Servings: 4


    2 Large Bone-In chicken breasts
    2 Cups Enchilada Sauce
    8 Corn Tortillas, 6-Inch
    1 Cup Shredded Cheese


1. Pre-heat oven to 450 degrees.

2. Line baking sheet with foil and spray with cooking spray. Place chicken breasts on baking sheet and sprinkle with salt and pepper.

3. Cover chicken with foil and bake for 45 minutes. Uncover and bake another 10 or until the internal temperature is 165 degrees.

4. Reduce oven temperature to 350. When chicken is cool enough, remove meat from bone until you have 2 cups shredded chicken discarding the skin.

5. Mix chicken with 1 cup enchilada sauce and 1/2 cup cheese.

6. Fill each tortilla with the meat mixture and place in a greased 8 x 8 baking dish.

7. Top with remaining enchilada sauce and cheese and bake for 10 minutes.

Yields 4 servings.
