Ingredients

    1 package Pillsbury Classic Pizza Crust refrigerated dough
    1 c. canned crushed tomatoes
    Italian Seasoning, garlic powder, onion powder (to taste)
    3/4 c. part skim mozzarella cheese
    2 c. chopped mushrooms
    1/2 c. thinly sliced onion
    2 c. roughly chopped spinach
    1/2 T. chopped garlic
    1 1/2 oz. turkey pepperoni, chopped
    5 t. grated parmesan cheese

Directions

Makes 5 servings.

Preheat oven to 375 degrees.

In a microwavable bowl, season tomatoes to taste. Set aside.

Spray a large skillet with non-stick spray and heat to medium high heat. Add mushrooms and onion, stirring frequently, until softened. Transfer to a bowl and set aside.

Add garlic and spinach to the skillet. Cook, stirring frequently, until wilted. Add to mushrooms and onions. Remove excess water from veggies with paper towels.

Add pepperoni and half of the tomatoes. Stir thoroughly. Set aside.

Unroll dough sheet and slice into 5 strips. Sprinkle workspace with whole wheat flour, and roll each slice into a large oval.

Place 1/5 of the filling, 1/5 of the cheese, and 1 t. parmesan in the center of each. Fold in half, using fingers to seal the edges.

Place on baking sheet, and cut a few slits in each to let the steam escape. Bake for 16-18 minutes.

Warm remaining tomatoes in the microwave, and serve in small bowls for dipping.
