    1 1/2 lbs. cooked chicken (canned is fine)
    1 can crushed tomatoes
    1 can enchilada sauce
    1 medium onion, chopped
    1 can chopped green chiles
    1 clove garlic, minced
    2 cups water
    1 can chicken broth
    1 tsp. ground cumin
    1 tsp. chili powder
    1 tsp. salt
    1/4 tsp. black pepper
    1 bay leaf
    16 bag frozen corn
    1 Tbsp. dried cilantro


Combine all ingredients. Cook in crockpot on low 6-8 hours or on high 3-4 hours or add about 2 cups more water and simmer on stovetop about an hour. Makes 12 one-cup servings, 2 WW points each. Delicious served with crumbed tortilla chips and shredded cheddar cheese (don't forget to add the points).
