Introduction

This basic recipe is so good and can really be played around with. Broccoli, turkey bacon, shredded ham, asparagus or even salmon would be good add-ins! I usually use spinach and bacon and I get rave reviews whenever I make it for a crowd! This basic recipe is so good and can really be played around with. Ingredients

    1 dozen large eggs
    16 oz 1% cottage cheese
    2 cups shredded cheddar
    1/2 cup flour
    1 tsp baking powder
    10 oz pkg chopped froz spinach, thawed and drained
    1/2 cup finely chopped onion
    2 Tbsp butter
    salt and pepper to taste



Directions

Saute onions in butter until soft and see-thru. Whip one dozen eggs with hand mixer until fluffy (but not frothy). Add in only 1 cup of shredded cheddar (reserve other for later). Add in all other ingredients including salt and pepper to your own preference. Mix thoroughly and pour into greased 9x13 pan. Bake at 400 for 10 minutes and then carefully take out of oven and sprinkle remaining cheddar on top. Bake at 350 for another 30-35 minutes.

Makes 8 servings (16 pieces - 2 per person)
