A refreshing salad to enjoy any time of year. A refreshing salad to enjoy any time of year.
Number of Servings: 6


    1/2 pound sugar snap peas, trimmed
    1 cucumber, sliced thinly
    1 cup radishes, sliced
    1 red onion, sliced thinly
    1/2 cup flat leaf parsley, chopped finely
    2 T extra virgin olive oil
    2 T lemon juice or vinegar
    salt and pepper to taste


Bring 2 quart pot of salted water to boil.
Add sugar snap peas and bring back to boil for about 30 seconds until they turn bright green.
Drain and plunge into cold water to stop cooking. Drain again. Place in refrigerator while preparing other ingredients.
Chop and slice all ingredients.
Toss peas, cucumber, radishes, red onion, flat-leaf parsley with lemon juice and olive oil.
Season with salt and pepper to taste.
