    Spinach, fresh, 260 grams
    Garlic, 2 tsp
    Cottage Cheese, 1% Milkfat, 150 grams
    Pine Nuts 40 grams
    Egg, fresh, 2 large
    Nutmeg, ground, 0.5 tsp
    Pepper, black, 1 tsp
    Blue Cheese, 50 grams
    Scallions, raw, 100 grams
    Canola oil 1 tsp


Toast pinenuts gently in dry pan until browned, set aside.

Chop scallions finely and fry in oil with garlic until soft. Stir in spinach, adding more to pan as it wilts down. Remove from heat to oven proof dish.

Beat eggs with cottage cheese, nutmeg and pepper.
Pour over spinach.

Crumble over the blue cheese and pine nuts.

Place in oven at 180'C for 30 mins, or until set and browned.

    Yum! I made this for dinner yesterday and loved it! I modified it to use what I had in the fridge. I substituted feta for the blue cheese and extra spinach (200g per person) plus cherry tomatoes thrown in to the spinach mix at the end. I'll be trying this again for sure, next time with blue cheese. - 3/11/11
