Introduction

Great alternative to the usual lettuce based salad. My brother-in-law just got back from Greece where this dish was inspired. Great alternative to the usual lettuce based salad. My brother-in-law just got back from Greece where this dish was inspired.

Ingredients

    1 c cucumber w/ peel - seeded
    1 c plum tomatoes - seeded
    1 c red pepper
    1 c red onion
    2 Tbsp EVOO
    1 tsp basil/oregano
    32 calamata olives
    4 oz reduced fat feta

Directions

Cut all veggies into bite sized pieces (I prefer larger chunks, but whatever you like is fine). Drizzle oil over veggies. Toss and season to taste with italian seasonings. Refrigerate until ready to serve. Add olives and feta to top just prior to serving. Makes 4 -1 cup servings.
