    Pork Roast (1-1/2 lbs)
    V8 Vegetable Juice (11.5 oz can)
    Cilantro Paste (1 tsp)
    Dried Red Peppers (1 tsp)
    Onion Powder (1 tsp)
    Garlic Powder (1 tsp)
    Raw Onions (1/4 cup, chopped)
    White Flour (2 Tbsp)
    Corn Tortillas (14, medium)
    Monterey Cheese (1/2 cup, shredded)


Crockpot Pork:
* In crockpot mix V8, cilantro, red peppers, onion & garlic powder, and raw onions - mix well
* Add pork to crockpot, cover, and cook on high for 5 hours, or low for 8-9 hours
* Remove pork from crockpot and place on plate to cool, leaving cooking sauce in crockpot
* Preheat oven to 375 degrees
* Whisk 2 Tbsp flour into cooking sauce, spoon 1/4 cup sauce into bottom of casserole dish
* Microwave 14 tortillas wrapped in paper towels for approximately 30 seconds to soften, then roll pork into tortillas - place side-by-side in casserole dish
* Top enchiladas with remaining sauce, then top with cheese
* Bake in oven (uncovered) for 15 minutes
* Turn oven off and let enchiladas sit inside for 5 minutes
* Serve & Enjoy!
