Introduction

This is my kid's favorite dinner for a hot night! I have adjusted it so that I can eat it as well by using whole grain pasta, greek yogurt, light cheese and other healthy choices. Ingredients

    13.5 oz box Eating Right Whole Grain Rotini (better than pene but nutritional info is the same), cooked and cooled
    1 Tbs extra virgin olive oil
    3 cups green grapes
    1 small jar black olives, sliced
    2 small cans white albacore tuna packed in water
    3/4 cups 2% sharp cheddar cheese

    3/4 cup non-fat greek yogurt
    1/2 cup 2% milk
    2 Tbs mayonnaise
    1 Tbs dijon mustard
    2 Tbs organic blue agave syrup
    1 tsp beaumonde seasoning
    salt and ground pepper to taste, if desired


Directions

Cook pasta and toss in olive oil. Cool in fridge or in ice bath. If cooled in ice bath, add olive oil after pasta is drained. Toss with tuna, olives, grapes and cheese. Mix yogurt, mayonnaise, milk, agave nectar and seasonings together for dressing and toss. If you are making this ahead keep dressing separage and toss just before serving or the pasta will absorb dressing and salad will be dry. Makes 11 1 cup servings.
