Ingredients

    White Rice, long grain, .5 cup
    Onions, raw, 1 cup, chopped
    Olive Oil, 2 tsp
    1 large can Muir Glen fire roasted crushed tomatoes
    1 can organic Black Beans
    Corn Frozen 1 ½ cup
    Chili powder, salt, other seasonings to taste

Directions

Chop onions, heat pan and add oinions and rice. Saute for 5 minutes or until onion is soft. Add tomatoes, beans, salt to taste, and chili powder or other chili seasonings (adobo, cumin, oregano) to taste. Cover and cook 20 minutes, adding water if the mixture seems dry. Add corn and cook an additional 10 minutes.
