Mmmmm nothing like some scalloped potatoes to go with.. anything! Mmmmm nothing like some scalloped potatoes to go with.. anything!
Number of Servings: 6


    Vegetable oil spray
    1 cups milk, 1%
    1 cup sour cream, nonfat
    3 tablespoon margarine, softened
    1 tablespoon cornstarch
    1/8 teaspoon pepper
    4 medium potatoes (about 1 pounds), peeled and cut into 1/8 to inch thick slices
    medium onion, diced
    paprika to taste


Preheat oven to 350 F. Spray an 8 x 11 x 2 inch baking pan with vegetable oil spray. In medium bowl, whisk together milk, sour cream, margarine, cornstarch, and pepper.

Line pan with one third of potatoes. Pour one third of the sour cream mixture over the potatoes. Sprinkle half of the onion. Repeat layers. Top with remaining potatoes, then with remaining sour cream mixture.

Cover with aluminum foil and bake for 1 hour. Uncover and bake for 20 minutes. Sprinkle with paprika. Let stand 5 minutes before serving.
