Wonderful Cashew Chicken the children will love. Wonderful Cashew Chicken the children will love.
Number of Servings: 4


    1.5 lbs boneless, skinless chicken breast cut into 1-inch cubes.
    1 tbsp cornstarch
    Course salt and fresh ground pepper.
    2 tbsp vegetable oil
    6 garlic cloves minced
    8 scallions, white and green parts separated, cut into 1 in pieces.
    2 tbsp rice vinegar
    2 tbsp hoisin sauce
    1/4 cup water
    3/4 cup raw cashews - toasted
    White Rice - steamed for serving


Coat the chicken in the cornstarch and season with salt and pepper.
Heat 1 tbsp of oil over medium/high heat in a non-stick skillet and cook 1/2 chicken until browned (3 mins) then transfer to a plate.
Heat remaining oil then add the rest of the chicken with the garlic and white scallions until browned (3 mins).
Return rest of chicken to the pan and add the vinegar, cook until evaporated (30 secs).
Add Hoisin Sauce and Water, cook, tossing, until chicken is cooked through (1 min).
Remove from heat, stir in green scallions and cashew nuts.
Serve over white rice.
