    -3 large eggs
    -2 C shredded zuccini (about 1 med. zucc)
    - 8 oz or 1 C crushed pineapple (I used the tidbits and crushed them in the processor)
    -3/4 C applesauce (this is the remains of 1 C applesauce drained in a fine strainer for 15 minutes)
    -2 T canola oil
    -2 t vanilla extract

    -2 C all purpose flour (9 oz)
    -1 C whole wheat flour (4.5 oz)
    -1 C granulated sugar (regular sugar)
    -2 t baking powder
    -1 1/2 t ground cinnamon
    -3/4 t ground nutmeg

    -3/4C chopped walnuts like Diamond brand (94g)


--Crush the pineapple if you don't have crushed canned pineapple. Shred the zuccini and add to a large bowl with all the other wet ingredients. Mix well and set aside.

--Mix the dry ingredients, except the walnuts, in a medium bowl. Add the dry to the wet and mix, just until moistened and then fold in the nuts.

--Pour evenly into two lightly sprayed regular loaf pans and cook at 350 degrees for 50-60 minutes or until a knife in the middle comes out clean. Let stand for 10 minutes before removing from loaf pans.

--Makes 32 servings. 16 slices in each loaf.

    I havent ever tired or made this bread before so when I made it for my dad I wasnt quite sure what to expect. It turned out very well and is delicious! - 9/1/10

    I substitued pears for zucchini and one banana. It is different with pears. I should of used whole cup of applesauce. - 3/10/13

    I had lots of zuccini from the garden and this sounded good. I made 2 batches some of them were mini muffins and made mini loaves. They were delicious. - 7/9/12
