This recipe was sent to me by a friend that is a severe diabetic. She said that she can eat a piece of this and her blood sugar doesn't go up at all.She leaves off the powdered sugar.

Ingredients

*Flour, white, 1 cup
Granulated Sugar 1/4 cup
Baking Powder, 1 tsp Baking Soda, .5 tsp (remove)
Salt, .1/4 tsp
*Poppy seed, 1 tbsp
**Kellogg's All-Bran Original, 1 cup
Milk, 1%, 1/4 cup
Egg white, 2
*Canola Oil, 3 tbsp
8 oz Fat Free/sugar free Lemon yogurt
Lemon Peel, 1 tsp (remove)
Powdered Sugar, 1 tsp (remove)
Directions
1. Stir together flour, granulated sugar, baking powder, baking soda, salt and poppy seeds. Set aside.
2. In large mixing bowl, combine ALL BRAN cereal, milk, eggs, oil, lemon peel and yogurt. Let stand about five minutes or until cereal softens. Add flour mixture, stirring only until combined. Spread evenly in 8 x 8 x 2-inch pan coated with cooking spray.
3. Bake at 350 F about 25 minutes or until wooden pick inserted in center comes out clean. Cool and dust with powdered sugar before serving.
