Introduction

Number of Servings: 2

Ingredients

    1 tbsp olive oil
    1/3 cup chopped onion
    1 large cucumber peeled, seeded and in 1/2" slices
    1 cup chicken stock
    1 tbsp balsamic vinegar
    1/2 cup chopped fresh dill
    Garnish with sour cream (not in nutritional list)

Directions

Saute onion in olive oil for 2 minutes, Add cucumber and stock. Bring to boil and simmer for 10 min. Stir in vinegar, dill, salt and pepper. Puree and served chilled. Can garnish with sour cream and sprigs of dill.

Makes about 2 cups - serving size calculated with 1 cup per serving.
