    2 large tomatoes, halved
    1 clove garlic, minced
    2 tbsp shallot, minced
    1 tbsp lemon juice
    2 tbsp mushrooms, diced
    2 tbsp parmesan cheese, grated
    1/4 cup seasoned bread crumbs
    1 tbsp butter, quartered
    salt and pepper to taste


Serves 4

Combine mushrooms, garlic, shallots, lemon juice, parmesan cheese, and bread crumbs. Scoop out any of the tomato seeds from the halves. Add the sesoning mixture to the halves. Dot with the butter and season with salt and pepper. Place the halves on the preheated plank and roast for 20 minutes.
