    Cheese sauce:
    8 ounces extra sharp cheddar
    2 ounces blue cheese
    1 cup skim milk
    2 cups V8 juice
    1 T olive oil
    1 clove garlic
    1/4 cup chopped onion
    basil and oregano
    2 T flour

    1 box Barilla Plus rotini (cooked)
    3 cups broccoli
    1 cup cauliflower
    1 zucchini, chopped
    1/4 cup bread crumbs


In a 9x9x1 baking dish, mix together pasta and veggies. Set aside.

In a 3 qt pan, saute garlic and onion in olive oil until translucent. Sprinkle flour into mixture and stir until flour is lightly browned. Add milk and juice, stirring constantly. Slowly add all but 1/4 cup of the cheese and stir until melted.

Pour cheese sauce over pasta and veggies and stir to coat. Sprinkle remaining cheese and bread crumbs on top. Bake at 375 for 45 minutes.

Makes 12 servings.
