How to get the taste we love without a lot of work or expense! I cannot find the whole chilies, so just use the diced. If I do not have monterey jack cheese, I use mozarella. Works fine. I always serve this dish with refried beans as a side. Ingredients

    8 large Egg, fresh, whole, raw
    1 tsp Salt
    0.50 cup Flour, white
    0.50 cup Green Chilies
    6 oz Cheese, Mozarella, Low Moist/Part Skim (Lucerne)
    6 oz Cheddar Cheese
    2 cup Milk, 3.25%

Directions

Makes 8 servings
Spray casserole dish with pam. Spread the two cans of diced chilies on the bottom. Sprinkle the chilies with the shredded monterey jack or mozzarella cheese.
Beat eggs in a large bowl and then add flour, salt, skim milk powder and water. Mix really well. Pour carefully on top of chilies and cheese. Sprinkle with grated cheddar. Bake about 40 to 45 minutes.
