    1 egg white
    1 Tbs lemon juice
    3 Tbs cornmeal
    2 Tbs grated parmesan cheese
    1/4 tsp black pepper
    4 (1/4 lb) Turkey breast cutlets
    4 tsp olive oil


Serves 4

1. Whisk egg white and lemon juice on a large shallow plate. Combine the corneal, Parmesan cheese, and pepper on a sheet of wax paper.

2. Dip each cutlet into the egg mixture, then coat in the cornmeal mixture.

3. Heat the oil in a large nonstick skillet over medium-high heat. Add the cutlets and cook until browned and cooked through, about 3 mins on each side.
