Introduction

There are many versions of layered salad, typically called 7-Layer salad. I love this one because of the tasty dressing. You can add or subtract vegetables according to what you prefer, and you can use iceberg or romaine instead of the spring mix lettuce. Ingredients

    1 cup Smart Balance Spin Blend Omega Salad Dressing
    1 cup Greek Yogurt, zero fat, plain
    3/4 cup Kraft Parmesan cheese
    1 tsp. black pepper
    1/2 tsp. garlic salt
    6 (or more) cups Spring Mix lettuce (or your favorite lettuce)
    2 cups frozen peas (thawed)
    2 cups fresh broccoli florets (chopped)
    1 cup finely diced celery
    3/4 cup chopped scallions
    4 hard boiled eggs, chopped
    2 cups shredded sharp cheddar cheese
    1 pkg Hormel bacon bits

Directions

Mix first 5 ingredients (through garlic salt) together until smooth. In a glass pan or bowl, layer lettuce, then peas, then broccoli, then celery, then scallions, then eggs. Carefully spread dressing over top. Sprinkle cheese evenly over top, then bacon bits. Chill until ready to serve.
