Ingredients

    1/4 cup olive oil
    1/3 cup honey
    1/3 cup soy sauce
    1/4 teaspoon ground black pepper
    1 TBS minced garlic
    1 lb raw shrimp (peeled, deveined)
    1 lb chicken, in 2 inch cubes
    1 medium onion, in 2 inch pieces
    1 package whole fresh mushrooms, rinsed
    1 red bell pepper, cut into 2 inch pieces
    1 fresh pineapple, in 2 inch cubes

Directions

In a large bowl, whisk together oil, honey, soy sauce, garlic and pepper. Before adding veggies and meat, reserve a small amount of marinade to brush onto kabobs while cooking. Place the meat and veggies in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better). Do not put pineapple in marinade, you can cut it, but store it separately until ready to thread on skewers.

Preheat the grill for med-high heat.

Drain marinade from the meat and vegetables, and discard marinade. Thread chicken, shrimp, veggies and pineapple on separate skewers to allow for different cooking times.

Lightly oil the grill grate. Place the skewers on the grill. Cook chicken for 12 to 15 minutes, until chicken juices run clear, the rest for about 10 minutes. Turn and brush with reserved marinade frequently.

Veggies/fruit and shrimp will most likely cook faster than chicken so check for "doneness" frequently.
