Ingredients

    1 cup Corn Meal
    1 Eggplant - Sliced peeled or unpeeled
    1-2 Zucchini or one green, one yellow- sliced
    Trader Joes Roasted Red Peppers, one jar
    1 cup low fat Mozzarella - shredded
    1 1/2 white onion - sliced
    garlic
    1 can tomatoes
    1 tsp salt or to taste, optional even
    1/4 tsp pepper --or to taste, optional even

Directions

Cook corn meal according to directions on package - pour onto jelly roll pan that has been sprayed with Pam and smooth to make the "crust."

Roast the veges- including the onions and garlic- sprinkle with salt and pepper

Place canned tomatoes into blender and add roasted garlic and the 1/2 roasted onion, salt and pepper to taste and blend.

Spread the crust with the tomato mixture. Arrange the remaining roasted veggies and the TJ's peppers on top of sauce, sprinkle with cheese. Bake at 350 for 10- 15 minutes.

Can serve as many as 12-15 people at a buffet...but makes a nice dinner sized serving for eight.
