A family favorite, and so easy! A family favorite, and so easy!
Number of Servings: 4


    2 large chicken breast halves
    1 T jerk seasoning
    1.5 cups mixed tropical fruit, canned in juice (Dole Tropical Blends works well)
    1 small onion (chopped)
    2 garlic cloves (minced)
    1 T chopped fresh cilantro


Makes about 4 servings
Season chicken well with jerk seasoning and place in baking dish. Drain and chop fruit into smaller pices and combine with diced onion, minced garlic, and cilantro. Spread over chicken. Cover with foil and bake at 350 F until done.
Grill option:
Follow direction above except
Grill seasoned chicken. While chicken is cooking, prepare salsa ingredients and wrap in a foil packet, grill alongside chicken. Combine before serving.

Excellent with black beans as a side dish!
